Which sizes are included?

Eight: the ICAO international 35×45 mm standard, and the United States, South Korea, Japan, China, United Kingdom, Canada and Australia passport sizes. Each links to the issuing authority that publishes the head-height figure, so you can recheck it before you submit. Anything else you can enter by hand.

Is my photo uploaded anywhere?

No. The cropping happens in your browser and no request is made. A passport photo is an identity document, so it should not be sitting on someone else’s server.
